Soft boil the eggs (4 m 30 s in boiling water) and plunge into ice water

Fine chop the bacon then add to the mince and season (fry a small amount of the meet into a mini burger to check seasoning) then knead the meat together for a few minutes until homogenous and tacky

Divide the meat into 9, take one portion and flatten out onto plastic wrap

Cover an egg in cornflour then wrap in the meat using the plastic wrap to aid

The bread the outside of the meat with the following steps:
-cornflour
-egg wash
-bread crumb
-egg wash
-bread crumbAnd repeat for all eggs

Deep fry for approx 8-10 mins, turning regularly in 170 Celsius oil until golden brown

Once all eggs are deep fried place in a 200 degree oven for 15 mins or until meat is probed at 75 degrees to ensure meat is cooked
