In a skillet, fry the garlic cloves until golden brown. Set aside.

In the same skillet, sauté the onion and leek with salt, black pepper, and cumin. When the onion is translucent, set aside.

Sauté the Calabrese sausage until well browned. Set aside.

Add the quinoa to the skillet and sauté for 2 minutes with salt, black pepper, and cumin, just to dry it out a bit.

Add the garlic, onion, leek, and sausage to the quinoa. Mix everything together for 1 minute, then turn off the heat.

Let cool, then add the tomatoes and green onions.

Quinoa farofa goes very well with all kinds of meats.
