Ingredients

25 minutes
4 servings
  1. 1 /2 cup Sago washed and soaked for 8 hrs
  2. 3 cupsFull cream milk
  3. as required Sour curd 1/2 cup or lemon juice 1 tablespoon
  4. 1 cupJaggery
  5. 1/2 cupWater
  6. 1 tspCardamom powder
  7. 10 Saffron / Kesar threads (soaked in 1 tsp warm milk)
  8. as requiredChopped Nuts and almonds to decorate

Steps

25 minutes
  1. 1

    First, wash the sago 2 to 3 times. Heat milk in a heavy bottom pan on low flame.

    When it reaches boiling stage, add the sago pearls slowly and keep stirring.

    On another stovetop, melt the jaggery in water and when it reaches boiling stage, switch off and cool to room temperature.

    Cook the sago till it is transparent and soft. Then add the curd and cook till it's thick and grainy.

    Then add the jaggery syrup, carda

    Remove from stove, pour in serving bowls. Garnish with nuts and cherries. Serve hot or chilled. Enjoy.

Tips

How to avoid excess water in soaked Sago or Sabudana

If you happen to soak sago in excess water it may become sticky. To avoid this, take a strainer. Place a muslin or thin cotton cloth over it. Pour the soaked Sago and let the cloth absorb water. Extra water will drain off. Keep covered with another cloth for 5 to 6 hours.
