Prepare the ingredients. We always have homemade fried garlic oil at home, so use that. Marinate the ground pork with oyster sauce and leftover green cap sauce from making soup in the morning.

Heat the garlic oil until fragrant and golden. Add the carrots and ground pork, stir-frying until slightly cooked. Crack the eggs in, breaking them up a bit, then add the onions and stir to combine.

Season with soy sauce, green cap sauce, sugar, and ground pepper. Taste to ensure the flavor is strong enough so it won't be bland when you add the rice.

Once the flavor is right, gradually add the rice, mixing a little at a time. Add half, mix, then add the other half and mix again. This method helps everything combine more easily than adding all the rice at once.

Taste to see if it's bland and adjust the seasoning if needed. Add the sliced green onions and stir to combine well. It's done! 😋 Serve with fish sauce and bird's eye chili, squeeze some lime, and enjoy with green onions, cucumber, fried pork, and a fried egg. So many options! 😆
