Trim the dark green leaves at the bottom of the leek. Don’t throw them away you can use them in salads, dips and as a topping

Cut the leeks in half lengthwise, then rinse them very well to get rid of the dirt

Drizzle some oil on both sides and a pinch of salt

Then place them on a tray with the cut side down
- 5
Roast in a preheated oven on 180C for 20 minutes. Them turn them with the cut side up and continue roasting for 5 minutes until perfectly soft and caramelised.

You can add a sprinkle of parmesan or cheddar or any cheese just 2 minutes before you take them out. If parmesan, better to sprinkle some upon serving.
