Beat sugar and softened butter

Beat in eggs, add vanilla essence and baking powder

Sift flour and add to the wet mixture, folding until the dough is like a biscuit texture

Keep aside about 250g of the dough (for grating) and use the rest of the dough to evenly press into an oven tray or baking sheet

Poke the set dough with a fork, spread the jam over the dough with a spatula (depending on how much of jam you prefer)

Grate the saved dough over the jam and bake at 160 degrees for about 20 to 25 minutes (don't overbake)

Remove from oven, allow to cool completely and dust with icing sugar

Cut into squares and enjoy with a cup of tea
