This quick chutney beats any vegetable dish. When you're really hungry and out of veggies, this chutney is a great option. You don't even need a lot of spices.
Steps

Wash and chop all the tomatoes. Peel, wash, and chop the onions, green chilies, ginger, and garlic as well.

Heat a pan on the stove and add oil. Once hot, add cumin seeds, mustard seeds, and curry leaves to temper. Add the chopped onions, green chilies, garlic, and ginger. Sauté until fragrant. Once cooked, add the tomatoes and salt so the tomatoes soften quickly.

Stir occasionally with a spoon. Add the dry spices and cilantro. Turn off the heat.

Transfer to a plate.
