Mango Kesar Malai Kulfi

Mango and summer go hand in hand and Mango kulfi is just irresistible ! In this recipe, I have added fresh ripe mango chunks, homemade malai or milk cream, chopped nuts and Saffron. The results are heavenly! Mango being rich in vitamin A , B , minerals and antioxidants, should be included in our summer diet! Diabetics too can eat unripe or green mangoes. Ripe ones have lot of sugar content so have them in moderation. But having mangoes in summer is a must!Give this recipe a try.

Steps

First, dissolve the milk powder with little milk, add to rest of the milk. Slow boil while this mixture while stirring till thick for around 15 minutes. It should coat the back of a wooden spoon.

Then add malai, sugar, saffron, cardamom and nuts powder and stir till dissolved.

Cool the mixture. Add in the mango puree and pieces. Mix well. Add a few drops of kesar yellow colour too if you want colour.

Wash kulfi molds in cold water. Fill them with the mixture and secure lid with foil and rubber band.

Deep freeze till set for around 7 to 8 hours. Then remove from molds by dipping in warm water for a few seconds.

Serve garnished with nuts and silver warq. Enjoy!!
