Ingredients

2 people, 4 dinners
  1. 1. For 16 meatballs:
  2. Halfpound ground beef, 70-30%,
  3. halfpound ground pork
  4. 1/4 cupolive oil
  5. Fresh farm egg
  6. CupChopped white onion
  7. Halfcup ricotta cheese
  8. 1/4 cupRomano cheese
  9. 1/4 cupchopped fresh parsley
  10. Clovegarlic, pinch of pepper, pinch of salt
  11. 2. For the potato chips:
  12. Poundfresh yukon potato slices, 1/8th inch thick
  13. TspTruffle powder, pinch of pepper, pinch of salt
  14. 2 Tbsolive oil
  15. 3. For the steamed leeks, broccoli or onions
  16. Cut vegetables in 16 pieces the size of the meatballs
  17. 4. For the cream sauce:
  18. Cupheavy cream
  19. Halfcup flour
  20. 4 Tbsbutter
  21. Tbsmustard
  22. Tbssoy sauce
  23. 5. For the topping:
  24. cuptillamook aged sharp cheddar, grated
  25. Equipment: half size baking dish, cast iron skillet
  26. Cost: beef $2, pork $2, potatoes $1, other $2, $1.75 per dinner

    Preheat oven to 450F degrees, Spray the baking sheet with olive oil, layer the sliced potato chips on baking sheet, sprinkle with truffle, pepper, salt, and olive oil, bake till crispy, about ten minutes.

    Make 16 meatballs: whisk egg, ricotta, Romano, parsley, garlic, salt, pepper. Mix into the meat with fingers, keep fluffy. Roll in tablespoon. Brown in skillet in Tbs olive oil, ten minutes, then spread evenly over chips.

    Brown flour in butter in cast iron skillet, add cream, mustard, soy sauce, warm and mix till creamy sauce, keep warm.

    Steam 16 broccoli florets or leek slices ten minutes, mix with meatballs over crispy chips, cover with cream sauce. Top with grated cheese, bake 15 more minutes at 350F degrees in oven. Serve, Enjoy.
