Cooking Instructions
- 1
Add all the sauce ingredients together and set aside.
- 2
Cut eggplant in half lengthwise and slits the flesh in crosswise pattern about 1/8 to 1/4" deep. Make sure not to cut all the way thru the eggplant.
- 3
In a pan, add some oil and fry eggplant with flesh side down on medium to low heat for about 10 minutes (fry longer ~20 minutes if using Italian style eggplants). Drizzle some oil on the outside of eggplant and spread it evenly across.
- 4
After 10 minutes, eggplant should look cooked and slightly caramelized on the inside. Spread miso on top of eggplant.
- 5
Bake eggplant in the oven for another 5 to 10 minutes at 350 degree Fahrenheit.
- 6
Take out, sprinkle some toasted sesame seeds and serve warm.

Microwave “Grilled” miso eggplant Microwave “Grilled” miso eggplant
Miso eggplant is usually deep fried or roasted in the oven before coating with miso paste. Using this method of microwaving without covering the dish, gives the eggplant a similar texture without the oily mess. And also works well if you do not want to switch on your oven. Takes less than 10 mins! Recipe is modified from a Japanese website. Gem -

(Meat Miso-style) Eggplant Miso For Vegans (Meat Miso-style) Eggplant Miso For Vegans
This is one of the series of "I can eat many bowls of rice with this!"Meat miso has been pretty popular but since I don't eat meat, this is MY favorite recipe! It's 105 kcal per serving but if you don't use oil for frying it will be 50 kcal! The texture of mushrooms is similar to the meat, and eggplant becomes like fat in meat when it's fried and absorbs oil (so they say). But both are just "replacements" .It's also delicious when you use this as a meat for mapo tofu, put it on cucumber as shown on the photo or on top of tofu as well! Just try them. Easy & Simple Mapo Eggplant with Miso and Pork Easy & Simple Mapo Eggplant with Miso and Pork
I've been making this family favorite for ages.Soaking eggplant in water does get rid of its bitterness, but it also makes it less likely to soak up a lot of oil, so you can cut calories. If you have gochujang, try it instead of the miso + doubanjiang. This recipe is really easy and delicious. For 2 servings. Recipe by Chiton cookpad.japan
