What a delicious dish that brings the taste of summer—fresh vegetables, healthy cooking, and so simple. Truly a treat.

Wash and cut all the vegetables into medium-sized cubes. Cut the tomatoes into wedges, slice the onion, and mince the garlic.

In a Dutch oven, heat the olive oil. Add the onion and eggplant and sauté over high heat for 3 minutes.

Add the bell peppers and cook for 2 minutes over high heat, then add the zucchini, tomatoes, garlic, bouquet garni, rosemary, salt, and pepper.

Cover and simmer for about 5 minutes, then uncover and cook, stirring occasionally, for at least 40 minutes or longer. I like to let it simmer for at least 1 hour. Adjust the seasoning to taste.
