Banana Flower is highly nutritious, rich in Iron and many other minerals. It is beneficial for anemic people. Out of many different recipes, I selected to prepare Raita for the summer. #SD1
Steps

Collect stems from the whole banana flower. Remove the hard Rod like structure and thin hard skin covering the stem.

Boil the stems in pressure cooker with water and little salt till whistle blows once.

Squeeze the stems to remove water completely. Chop the stems finely.

In a kadhai, add oil. Add cumin seed and mustard seed for tempering. Add Hing to enhance flavor. Add chopped stems of banana flowers and curry leaves. Cook in low flame for 2-3 minutes.

Add salt, turmeric powder and chili powder. Sauté for 1min. Add water to cook stems of banana flowers properly.

When the curry becomes dry, switch off the burner and let it cool down.

In a serving bowl, take beaten curd. To it, add the curry and mix thoroughly. Banana Flower Raita is ready to serve.
