Heat oil in a pan. Add ponch phutan and allow to splutter. Then add dals, green chillies, dry red chilli, hing powder, ginger and onion.

Saute on low flame till they become aromatic.

Now add the blanched veggies, salt and turmeric powder. Saute for a minute and mix 2.5 cup of water. Allow to boil.

Slow down the flame and allow to sooji to mix well with veggies. Mix the lemon juice also.

Delicious and flavoureful sooji veggies Upma is ready to serve hot or cold.
