Muffaletta Olive Salad Muffaletta Olive Salad
You can use it as a spread on sandwiches or to enhance regular lettuce and tomato salads. Serve atop pasta, mix in potato or macaroni salads. Serve with tuna and so on.This salad originates in New Orleans by Italian immigrants. If you don't want to buy the individual ingredients or you don't want to pickle them homemade, buy the Italian Giardiniera pickled vegetable mix. You can also get the olive salad at some grocery stores. Just use most excellent olive oil. Some Muffaletta Sandwiches use this olive salad minced into a paste but I like the rustic texture. If you make the sandwich use a good Sicilian round bread and good cuts of meat. skunkmonkey101
