A really simple and fast recipe for a nice summer salad!

Ingredients

2 People
  1. 1 cupchopped black and green olives
  2. 1/2 cupchopped roasted red peppers
  3. 1/4 cupchopped red onion
  4. 2garlic cloves, minced
  5. 1 tablespoonchopped fresh parsley
  6. 1/4 cupolive oil
  7. 3 tablespoonsred wine vinegar
  8. 1 teaspoondried oregano
  9. 1/2 teaspoondried basil
  10. 1/4 teaspoonblack pepper
  11. Pinchsalt
  12. 2Chicken Filets
  13. Walnuts

Cooking Instructions

  1. 1

    Combine all ingredients in a medium bowl. Cover and refrigerate for at least 1 hour before using. Flavor will get better with time.

    Cut the chicken fillet in strips and coat them in mayonnaise. Add Panko breadcrumbs and bake the strips in the pan 'till they're golden.

    Serve the salad in a bowl, put the chicken strips on top and finish with some walnuts for that nice crunch!
