It's World Cocktail Day today and thought I would pay homage to the Vikings using their 'water of life' aquavit as a base for a cocktail.

Aquavit comes from early distillers believing liquor to be a healing liquid as other spirits such as 'whisky' stemming from Gaelic's 'uisge beatha' and brandy being referred to as 'eau-de-vie'. Aquavit is distilled from grain or potatoes and is flavoured with a variety of herbs, primarily caraway and dill but can include other spices such as fennel, coriander, citrus and anise.

I've added to this Wray Nephews, a rum that has been produced in Jamaica for 190 years. It is used to celebrate every milestone from birth to death and even poured into the foundations of a new space to cleanse and ward-off evil spirits.

To balance the high alcohol content, I've added a tot of Noilly Prat, France's first vermouth, invented by Joseph Noilly in 1813 and a splash of Kumquat liquer, the local drink in Corfu.

Calamansi is renowned for keeping kidney's healthy so I thought this a fitting juice to top up the glass.

Ingredients

1 serving
  • 30 mlAquavit
  • 20 mlWray Nephews
  • 15 mlNoilly Prat
  • splashKoumquat liquer
  • 15 mlfresh lime juice
  • 40 mlcalamansi juice
  • stem angelica
  • To serve:
  • Champagne flute
  • Icelandic lava salt
  • lime wedges
  • angelica flower

Steps

  1. 1

    Chill the flute. Run a sliver of lime around the rim and dip in lava salt.

    Chop the stem off the angelica and add to the cocktail shaker. Add a good handful of ice, then add the Aquavit, Wray Nephews, Noilly Prat, Koumquat and lime. Shake and pour into the chilled cocktail glass and top up with calamansi juice. Place a lime wedge and angelica flower on the rim.
