Cut raw mango into desired size.Add turmeric powder and 2 tbsp salt,mix well.Cover and keep in sun light for 3-4hours.

After 3-4hours water from mango will release.Strain and put mango pieces in a tray/big thali and spread the pieces.Keep in sunlight for 1 hour to dry thr moisture.Do not over dry.

Now dry roast mustard seeds,fennel seeds,cumin seeds,peppercorns and fenugreek seeds.Dry roast on low heat for 3-4minutes.

Take out in a grinder and grind coarsely.Take out in a mixing bowl.

Dry roast nigella seeds and carom seeds on low heat.Take out and keep aside.(Do not grind)

Add 200 ml mustard oil to the ground spices,add red chilli powder and kashmiri chilli powder.Mix well.Add salt to taste.

Coat the mango pieces with prepared spice mix.Add carom seeds and nigella seeds.

Transfer to a clean dry ceramic/glass jar.Add remaining mustard oil.Close the lid of jar Keep in sunlight for 12-15 days.
