Ingredients

  1. 1 tblveg oil
  2. 700 grItalian sausage
  3. 500 grseedless grapes (I like half green half red)
  4. 1large onion
  5. 1/4 cupwater
  6. 1/4 tspblack pepper
  7. 1/8 tspsalt
  8. 1/2 tspdry oregano (or fresh if you can get but add with wine stage)
  9. 1/4dry white wine
  10. 2 tspbalsamic vinegar
  11. 2 tbspfresh mint

Cooking Instructions

    Heat oil in a frying pan on MEDIUM heat then brown the sausages on both sides. About 2.5 mins per side.

    Do NOT prick sausages and they should not burst.

    Remove from heat Tilt pan and remove and extra oil with kitchen paper.

    Return to heat Add grapes cut in half and onion on top and add water and cover immediately with lid. Cook 10 mins until sausage about internal 75c

    Remove sausages from pan onto a kitchen paper lined plate and cover with foil.

    Add the salt and pepper and dry herbs. and spread evenly in the pan leave for 4 mins until start to see colour around the edges. Then stir for a few more mins until most liquid gone and everything golden brown.

    Add wine and fresh herbs if using. Then stir 1mins. Nearly all liquid should have gone. Turn off heat. And add vinegar stir then plate up.

    Line up sausages and top with sauce. Sprinkle with a little chopped fresh mint and serve with my famous mashed potatoes (separate recipe)

Well I started with Cookpad during Covid....... Guess alot of us did, Amazing Site great to share with passitionate people. I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
