Ingredients

  • 2.2 lbschicken (1 kg)
  • 1 1/2 cupsshredded coconut (about 150 grams)
  • 4 tablespoonsghee (clarified butter)
  • 1/2 teaspoonasafoetida
  • 1 teaspooncumin seeds
  • 2bay leaves
  • 2black cardamom pods
  • 1-inch piece cinnamon stick
  • 6cloves
  • 1star anise
  • 2black cardamom pods
  • 4green cardamom pods
  • 5onions
  • 1-inch piece ginger
  • 10-12garlic cloves
  • 6green chilies
  • 4tomatoes
  • 2 teaspoons salt
  • 1/2 teaspoonturmeric powder
  • 1/2 teaspoonKashmiri red chili powder
  • 1 teaspoonred chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoongaram masala
  • 1 teaspoon chicken masala

    Wash and clean the chicken thoroughly. In a large pan, heat 4 tablespoons of ghee. Once hot, add asafoetida, cumin seeds, bay leaves, black cardamom, cinnamon, cloves, green cardamom, and star anise. Sauté for 2 minutes, then add finely ground onions, ginger, garlic, and green chilies. Stir continuously and cook until the onions turn golden brown.

    When the onions are golden, add finely ground tomatoes and cook well. Add salt, chili powders, turmeric, coriander powder, garam masala, Kashmiri red chili powder, shredded coconut, and chicken masala. Cook for 5 to 7 minutes until the oil starts to separate from the spices, then add the chicken.

    Add the chicken and cook, stirring continuously, for 5 to 10 minutes. Add 2 cups of water and cover. Cook for 15 to 20 minutes until the chicken is fully cooked.
