I love love LOVE yeast breads but I suck at baking them for the most part. But this recipe, which is a redo of one I found 15 years ago, is a yeast bread, but a quick, instant gratification yeast bread. I love my crumbles and I love soft, fluffy and a little bit chewy sweet cakes. I’ve made this a few different ways. This dough has endless possibilities. I’ll publish another soon.

Ingredients

  1. For the dough:
  2. 1 packetyeast
  3. 2 1/2 cupswarm water
  4. 4 cupsflour
  5. 1/3 csugar
  6. 4 tbspmelted butter
  7. 1beaten egg
  8. 1 tspsalt
  9. 2 tspbaking powder
  10. 2 tspbaking soda
  11. 1 tspsalt
  12. For the topping:
  13. 1 canapple pie filling- I used sugar free
  14. 1 tbspbrown sugar
  15. Cinnamon
  16. For the crumb top:
  17. 4 tbspcold butter, cut into pieces
  18. 1/2 cupflour
  19. 6 tbspbrown sugar
  20. Cinnamon

Cooking Instructions

  1. 1

    Preheat oven to 400. In a small bowl combine yeast in warm water with 1 tsp of sugar. Stir it up and let it sit for bit until it foams.

    In a large bowl combine the dry ingredients and whisk together. Melt the butter and whisk with the egg. Pour the yeast and water into the flour mixture and add the egg and butter and mix well. It should be a sticky dough.

    Prepare a baking pan with nonstick spray. Dump dough into pan. Using a little flour on your hands and a little sprinkled over the dough, Pat the dough to the edges. The dough should be soft and silky.

    Mix the topping ingredients and evenly spread over dough.

    Mix the crumb topping with a fork, pastry blender, or your hands to a coarse crumb and sprinkle over apples. Bake 30/40 minutes until it springs back and the topping is browned. My daughter had hers with ice cream ♥️ 🍨

Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
