Steps

Wash, peel & chop the arbi into medium sized, thinnish rounds. Keep the chopped arbi in a bowlful of water
You can apply a little oil to your palms while peeling the arbi. - 2
Heat oil in a kadhai, add the zeera, ajwain, hing & chopped garlic in the tadka. Allow it to sizzle for a few seconds

Add the turmeric, cumin seeds & red chilli powder. Mix quickly

Add the drained arbi pieces & mix well.

Allow it to cook on medium heat for 5-7 mins, stirring in between.

Now cover & cook on low medium heat till almost done.

Remove the lid. Allow the arbi to dry up a bit, then add amchur powder, both the salts and the pepper powder. Turn up the heat, cook for 1 -2 minutes till crisp. Take off heat

Serve with Roti / Parantha or Dal Rice!
