Creamy Soup of Broccoli That Turned Yellow

It doesn’t happen often as I am quite good at using up Vegetables. However, today I found a head of Broccoli that was in an opaque plastic bag and it had turned yellow. I always cook this soup when I find Broccoli that turned yellow. This is a simple recipe but it is a great recipe to enjoy such Broccoli that is not so great anymore.

Ingredients

2 to 4 Servings
  1. 1 headBroccoli that turned yellow *cut into small florets
  2. *Note: Stem can be used for the soup, but I used it for ‘Mock Zha Cai’
  3. 1Onion *thinly sliced
  4. 2 cupsVegetable Stock OR Chicken Stock *OR 2 cups Water and 1 Stock Cube
  5. 1/2 cupRolled Oats
  6. 1/2 cupMilk
  7. Salt & White Pepper

Cooking Instructions

    Place Broccoli and Onion in a large Saucepan OR Pot. Add Vegetable Stock (OR Chicken Stock), cover with a lid, and cook over medium low heat until soft.

    Use a stick Blender to blend until smooth. Add Rolled Oats and Milk, and bring back to the simmer, stirring frequently. Season with Salt & White Pepper. When the Oats are soft, the soup is done.
