  2. 1orange (juiced)
  3. 200 gdark chocolate 55% (adjust to taste)
  4. 150 gunsalted butter
  5. Egg Mixture
  6. 3eggs (room temperature)
  7. 90 gbrown sugar (adjust to taste)
  8. 70 gwhite sugar (adjust to taste)
  9. 1 gsalt
  10. 6 gorange extract
  11. Dry Ingredients
  12. 175 gall-purpose flour
  13. 45 gcocoa powder
  14. For Serving and Decoration
  15. slicesdried orange
  16. passion fruit curd
  17. For Passion Fruit Curd
  18. 85 gunsalted butter
  19. 75 gwhite sugar
  20. 1 pinchsalt
  21. 4egg yolks
  22. 3 gcornstarch

Cooking Instructions

    Chop the chocolate into small pieces

    Place the chopped chocolate, butter, and orange juice in a large bowl

    Melt using a double boiler until the chocolate and butter are completely melted. Stir continuously while melting

    Remove the mixture from the double boiler. Let it cool to room temperature

    In another bowl, combine 3 eggs and all the sugar (white + brown). Whisk until the mixture doubles in volume

    Add salt and orange extract to the whipped egg mixture. Mix well with a spatula

    Add the cooled chocolate mixture to the egg mixture

    Mix again using an electric mixer

    Sift the dry ingredients into the chocolate and egg mixture. Sift in small batches. Fold gently to combine

    Prepare a baking tray and preheat the oven to 340°F (170°C)

    Pour the batter into the baking tray and spread it evenly

    Bake at 340°F (170°C) for 9 minutes. Then remove the brownies and place the prepared dried orange slices on top
