Ghee Roast Egg Masala

In a heated pan, add coriander seeds, cumin seeds, fennel seeds, black pepper, clove, cinnamon, star anise, and dry red chili. Dry roast them until aromatic. After that, drop them in a mixer jar and grind. Make a fine powder out of it. This is your ground spice powder. As of now keep it aside to use later.

Then in a heated pan, add ghee and chopped onion. Saute onion for a while and then add ginger-garlic paste. Saute again until the onion changes its colour. Now add curry leaves, ground spice powder, chopped tomatoes, turmeric powder, and salt. Mix them and cook until tomatoes become mushy and the oil separates. Add water to the mixture and stir. Let the mixture simmer for a minute.

Take boiled eggs, and poke holes in them with a knife, fork, or toothpick. Carefully place them in the pan and coat them with the masala. Cover and cook for 7-10 minutes. Your egg ghee roast is ready. Serve hot.
