Cut bread into pieces

Assemble ingredients, roughly chop veggies and keep aside.

Make paste of tomato and keep aside.

In moderately heated pan add oil, add mustard seeds + curry leaves and allow to sizzle, add ginger and sauté for few seconds. Then add onion and sauté till pinkish. Then add chopped veggies and stir fry.

Add turmeric + little salt at this stage and stir fry for 3-4 minutes.

Now add tomato paste + water + sugar and cook for 3-4 minutes till rawness of tomatoes goes.

Gradually mixture thickens as water evaporates, add tomato sauce at this stage and mix well.

Cook for 2-3 minutes, add bread pieces and gently mix. Lower flame and let bread pieces coat with tomato mixture, mix for 3-4 minutes.

Dish is ready to serve.
