Ingredients

4 servings
  1. 6-8 oz1/2 & 1/2 salad mix, washed & dried
  2. 1-2 cGrape tomatoes, washed & halved
  3. 2Persian cucumbers, washed, halved lengthwise & sliced
  4. 1/3 ckalamata olives, pitted & torn in half
  5. Steamed french green beans, cooled & halved crosswise
  6. 2-3 ozhoney chevre, cut in 1 inch chunks
  7. Creamy balsamic dressing (Brianna's or from recipe below)
  8. Creamy balsamic dressing:
  9. 1 cupextra light olive oil
  10. 1/4 cupbalsamic vinegar
  11. 1 tbspDijon mustard
  12. 1/2 tbspcane sugar
  13. 1/2 tspsea salt
  14. 1/2 tspchopped garlic

Cooking Instructions

20 minutes
  1. 1

    Prepare lettuce & vegetables as given above.

    Assemble salad. adding goat cheese last.

  3. 3

    Dress to your liking with salad dressing and toss. Serve.

    To make Creamy balsamic dressing:

    Put all ingredients in a mixing jar. Process with an immersion blender until emulsified. Refrigerate the remainder.
