Ingredients

50 minutes
Serves 4 servings
  1. 2.2 lbspork trotters (about 1 kg)
  2. 1.1 lbstomatillos (about 1/2 kg)
  3. 2green chiles or serrano peppers
  4. 1/4onion
  5. 1large garlic clove
  6. 1 sprigepazote
  7. as neededOil
  8. Salt and pepper to taste
  9. 1potato
  10. 1/2 lbgreen beans (about 1/4 kg)

  1. 1

    Wash the pork trotters thoroughly and cook them with a little coarse salt in a pressure cooker for 20 minutes.

  2. 2

    For the sauce, cook the tomatillos, chiles, onion, and garlic. Blend them in a blender, then season in a saucepan with hot oil. Add salt and pepper to taste.

  3. 3

    Add the diced potato and chopped green beans to the sauce. Let cook for about 15 minutes, then add the cooked pork trotters and the sprig of epazote.

  4. 4

    Reduce the heat and let simmer for another 15 minutes.
