A delicious traditional Mexican recipe—literally finger-licking good! My mom used to make this with battered trotters, but that’s pretty complicated, so I make them without batter.

Wash the pork trotters thoroughly and cook them with a little coarse salt in a pressure cooker for 20 minutes.

For the sauce, cook the tomatillos, chiles, onion, and garlic. Blend them in a blender, then season in a saucepan with hot oil. Add salt and pepper to taste.

Add the diced potato and chopped green beans to the sauce. Let cook for about 15 minutes, then add the cooked pork trotters and the sprig of epazote.

Reduce the heat and let simmer for another 15 minutes.
