In a large bowl, mix the all-purpose flour, chickpea flour, and ghee. Gradually add water and knead to make a soft dough. Cover and let it rest for 2-3 minutes. Add a little ghee to the dough and knead again to set. Divide into portions and roll each into a flatbread. Spread ghee and sprinkle the spices evenly over the surface. Fold as shown in the picture to create layers.

Dust with dry flour and roll out again as shown in the picture. Heat a skillet and place the paratha on it. Drizzle ghee around the edges.

Flip and drizzle ghee on the other side as well. Cook on medium heat until both sides are golden and crispy. Repeat for all parathas.

Place the parathas on a serving plate and serve with pickle and tea.
