My husband really loves these fried chicken wings with fish sauce. Just pair them with a cold beer and some fresh greens for a perfect meal.

Cut the chicken wings at the joint. Boil the wings briefly with the garlic to ensure they cook through when frying. Remove the wings and let them drain so the oil won't splatter when frying. In a bowl, mix the fish sauce and sugar together, then add crushed garlic and chili peppers.

Heat oil in a skillet over medium heat and fry the chicken wings until golden brown. Remove the wings. In the same skillet, add the fish sauce mixture and bring to a gentle simmer, then return the wings to the pan and turn them to coat evenly.

Once the wings are well coated, transfer them to a plate and serve with fresh greens.
