Ingredients

4 servings
  • 🌻For the dough:
  • 500 gstrong white bread flour
  • 7 gdried fast-action yeast
  • 2 Tbspolive oil
  • 1/2 tspsalt
  • cornmeal or semolina flour, for dusting
  • 🌻For the topping:
  • 2green chillies deseeded & chopped
  • 4spring onions, finely chopped
  • 1/2bell pepper finely chopped
  • bunchflat-leaf parsley roughly chopped
  • 250 gbeef mince
  • 2 tspAleppo chilli pepper flakes / Crushed Red Pepper
  • 1/2 tspground cumin
  • 1 tspallspice
  • 🌻For the Garnish:
  • Handful cherry tomatoes cut into round sliced
  • 1/2lemon
  • 1medium red onion, thinly sliced
  • leavesSome chopped parsley

Steps

  1. 1

    Dissolve the yeast in the 1/4 cup warm water cover and set aside for 5-6 minutes. In a large bowl whisk flour and salt. Add oil
    Add  dissolved yeast over the flour mixture. Knead with warm water until all flour is incorporated.
    Cover with plastic warp and leave in warm place for about 1-2 hours or dough doubled in size.

    Heat the oven to as high as it will go (about 190°C/200°C fan/gas 9) and sprinkle one or two baking trays thinly with cornmeal.

    Put the tomatoes,onion,bell pepper,chillies, spring onions, finely chopped parsley, beef mince, spices, 1 tsp salt,cumin and 1/2 tsp freshly ground black pepper into a bowl and mix well.

    Take the dough and knead it briefly, then divide into four pieces and shape each into a ball. Roll each ball into a thin circle, place on the prepared baking trays. Spread with a thin layer of the meat mixture.

    Bake each flatbread for 10-15 mins until the edges begin to darken. After removing from the oven, arranged with the roughly chopped parsley,tomatoes and sliced onion, then squeeze over a few drops of lemon juice. Serve straightaway.
