Crab is a seafood I really enjoy—I love it in croquettes, burgers, casseroles, salads, and more. Ingredients

Serves 2 (makes 4 croquettes)
  1. Ingredients for the crab croquettes
  2. 8 ozcooked crab meat (225 g)
  3. 1 1/2 tablespoonsmayonnaise
  4. 1beaten egg
  5. 1/4 cupfinely chopped onion
  6. 2 tablespoonsfinely chopped green onions
  7. 1 tablespoonred bell pepper, diced small
  8. 1 tablespoongreen bell pepper, diced small
  9. 1 tablespoonchopped cilantro
  10. 1/4 teaspoonsalt
  11. 1/8 teaspoonground black pepper
  12. 1/4 teaspooncayenne pepper
  13. 2 tablespoonsbreadcrumbs
  14. 1/3 cupPanko breadcrumbs
  15. For the sauce
  16. 2/3 cupmayonnaise
  17. 1 tablespoonchopped capers
  18. 2finely chopped pickles
  19. 1 tablespoonchopped cilantro
  20. 1 tablespoonfinely chopped green onions
  21. 1 clovegarlic, minced

Steps

45 minutes
  1. 1

    In a bowl, mix all the croquette ingredients except the Panko breadcrumbs.

    Divide the mixture into 4 portions and shape each into a flat round patty.

    Coat the croquettes in Panko breadcrumbs and freeze for about 20 minutes while you make the sauce.

    Fry the crab cakes until golden brown and serve with the sauce.

    TO MAKE THE SAUCE
    In a bowl, mix all the sauce ingredients and refrigerate until ready to serve.

    You can serve the crab croquettes with coleslaw.
