Steps

In a heavy bottomed pan boil water and add washed, cut vegetables except beans. Once 3/4th boiled add beans and boil for 5 mins, drain and add to chilled water, set aside

For Dry Masala - in a pan roast whole coriander seeds, fennel, cumin seeds, cinnamon stick, black peppercorns, cloves, bay leaf, stone flower. Blend into fine powder and set aside

In a pan heat oil and add 1/2 chopped onion and on medium flame cook to brown colour, add grated coconut, whole red chillies, poppy seeds, cook till brown in colour, set aside, cool and paste with 1/2 cup water, set aside

In another pan heat rest of the oil add rest of the onion, add tomatoes and cook till oil surfaces. Add the paste and add 3/4 cup water, cook for 4-5 mins, add vegetables and add salt. Mix

Add the Kolhapuri Dry Masala of 3 tsp and mix, set aside

Plate and garnish with coriander leaves
