A slice of catfish can be used for both caramelized clay pot fish and sour soup, making it a dish you can enjoy again and again.
Steps
- 1
Rinse the catfish well, pat dry, and cut into pieces. Marinate the fish with all the seasonings for 30 minutes. After marinating, gently wipe off the fish and lightly fry in a pan to firm it up. Once fried, add the seasonings and 1 cup (about 240 ml) boiling water to the fish and simmer over medium heat.
- 2
When the liquid has reduced and is just covering the fish, pour the brewed green tea evenly over the fish (if you like, you can also add the steeped tea leaves for extra flavor). Once the fish is cooked through, transfer it to a clay pot lightly coated with oil and simmer on low heat to let the fish firm up.
