Ingredients

1 hour
1 loaf
  1. Sift Together:
  2. 200 gsifted all-purpose flour
  3. 11 gdouble-acting baking powder
  4. 3 gsalt
  5. Blend until creamy:
  6. 63 gshortening
  7. 135 ggranulated sugar
  8. 2 glemon zest
  9. Beat in:
  10. 1-2beaten eggs
  11. 280 gmashed ripe banana
  12. Fold in:
  13. 55 gchopped walnuts or pecans

Cooking Instructions

    Allow all ingredients to come to room temperature

    Preheat oven to 350ºF

  3. 3

    Add sifted ingredients in about 3 parts to the creamed mixture. Beat the batter after each addition until smooth.

    Fold in nuts

  5. 5

    Place the batter in a greased loaf pan and bake for about 1 hour. Bread is done when it begins to pull away from the sides of the pan and/or a toothpick comes out cleanly from the middle.
