Combine water and sugar in a pan. Mix well and cook on high flame for 5 to 7 minutes or till the sugar syrup is of 1 thread consistency.

To prepare boondi, in a large bowl take gram flour. Add water in batches.

Mix well and beat for 5 minutes forming smooth flowing consistency batter.

Heat oil in a pan. Pour the batter slowly over skimmer or ladle, keeping the oil hot.

Fry for 30 seconds or until boondi turns golden and crisp. Do not over cook. Remove the boondi immediately from hot oil.

For the next batch, wash your ladle and wipe it dry. Then repeat the same process.

Fry in batches until the batter is over. Keep all the fried boondi on a plate.

Transfer the boondi into warm sugar syrup and dip completely.

Cover and rest for 1 hour. Drain off over colander to remove excess sugar syrup.

Garnish it with almond slices and cashew nuts cardamom powder.

Finally, sweet boondi is ready to serve.
