Ingredients

3 people
  1. 3-4plum tomatoes, chopped to bite-size pieces
  2. Halfmedium red onion, diced finely
  3. 2cucumber, quartered and cut into bite pieces
  4. 1/4 cupbalsamic vinegar
  5. 1 tspdried oregano
  6. 1 clovegarlic, grated
  7. 1 cupfeta cheese, cut into cubes
  8. 1 handfulfresh mint, roughly chopped
  9. Kalamata olives
  10. Olive oil
  11. to taste Salt
  12. Fried chickpeas (Optional)
  13. 1 canready to eat chickpeas, drain and dry with paper towel
  14. Salt
  15. Paprika
  16. Oil for frying

Cooking Instructions

  1. 1

    Combine tomato, onion and balsamic vinegar. Add cucumber, garlic and salt (about 1 tsp).

  2. 2

    Add the feta cheese, kalamata olives, oregano and a generous amount of olive oil to dress the. Add the chopped mint before serving.

  3. 3

    Optional, top with fried chickpeas. To make, fried the chickpeas until crispy. Drain and season with salt and paprika.
