Ingredients

4 servings

Salad
15 ozchickpeas, rinsed and drained
1red bell pepper, chopped
1yellow bell pepper, chopped
1green bell pepper, chopped
1small red onion, chopped
15grape tomatoes, sliced into eighths
4 ozfeta cheese, crumbled
Dressing
2 tbspolive oil
2 tbsplemon juice
2 clovegarlic, minced
1 tbspdried oregano
salt
ground black pepper

Steps

Mix salad ingredients together in large bowl and toss

Mix dressing ingredients together in a separate bowl
3

Pour dressing into salad and toss
4

Add salt and ground black pepper if desired
5

Serve immediately or marinate in refrigerator for 1 hour
6

Enjoy within 2-3 days for freshness
