Ingredients

4 servings
  1. Salad
  2. 15 ozchickpeas, rinsed and drained
  3. 1red bell pepper, chopped
  4. 1yellow bell pepper, chopped
  5. 1green bell pepper, chopped
  6. 1small red onion, chopped
  7. 15grape tomatoes, sliced into eighths
  8. 4 ozfeta cheese, crumbled
  9. Dressing
  10. 2 tbspolive oil
  11. 2 tbsplemon juice
  12. 2 clovegarlic, minced
  13. 1 tbspdried oregano
  14. salt
  15. ground black pepper

Steps

  1. 1

    Mix salad ingredients together in large bowl and toss

  2. 2

    Mix dressing ingredients together in a separate bowl

  3. 3

    Pour dressing into salad and toss

  4. 4

    Add salt and ground black pepper if desired

  5. 5

    Serve immediately or marinate in refrigerator for 1 hour

  6. 6

    Enjoy within 2-3 days for freshness
