Melt the chocolate down together in a bowl be careful not to burn it by stirring regularly

Spread chocolate onto a 20cm×30cm lined baking tray and allow to set hard in the fridge

Cream together the butter, sugar and egg to make a smooth wet mixture
- 4
Chop the cherries into desired size pieces
- 5
Add the cherries and the desiccated coconut into the wet mix and fold together until fully combined

Spread mixture into the set chocolate, ensure the top is smoothed out for even baking

Bake in the center of an oven at 130°c until golden across the top. Usually around 30mins,but check regularly

Allow to cool down, once cool allow to fully set in the fridge for several hours

When fully set turn out onto a cutting board and cut into desired size pieces
- 10
Put into a food storage tub and enjoy =). Refrigeration not needed and will keep for a week
