Every year we celebrate Independence Day.It gives me a patriotic feeling.This year we are celebrating Amrit Mahotsav on completion of 75 years of independence.To celebrate this I have made rice and dal idlis and to give it orange colour I have used carrot 🥕 and for green colour mint leaves.Both are very nutritious - full of Vit.A and iron.We love South Indian dishes.

Ingredients

  • 2 cupsReadymade idli batter -
  • 1Carrot (peeled and grated)
  • 1/4 cupMint leaves puree(grind mint leaves in a mixer jar with water)
  • 1/2 tspSalt
  • 2 tbspSemolina
  • 1pouch Eno fruit salt
  • 2 tbspOil

Steps

  1. 1

    Mix semolina in the idli batter,add 3 tb.spoon water to adjust the consistency.Divide the batter into 3 parts.

    In a bowl,mix salt, mint puree to make green colour.In another bowl,add grated carrot and salt.For white colour I have used plane batter.

    For steaming- boil water in a big pan,grease the idli mould.Now add Eno fruit salt in all the 3 batters and mix.(Just before steaming the idlis)

  4. 4

    In the idli mould first fill it with orange batter,then white and in the last green colour batter. Steam it for 8-9 min.on high flame.

    Your tri colour healthy and tasty idlis are ready to serve.Serve it hot with roasted chana and coconut chutney.
