Malpua

Amaze your family with this super delicious and flavorsome malpua that are crisp on the edges and soft at the centre. Malpua are the traditional North Indian pancakes made with wheat flour , jaggery or sugar, milk and cardamom powder. Other ingredients such as fennel seeds, semolina, khoya , yogurt even if banana are some times added to the malpua batter to enhance its taste.

In a large mixing bowl take wheat flour, fennel seeds, sugar powder, semolina, thickened milk, cardamom powder, jaggery. Mix everything well. Make a smooth batter. If extra milk needed you can add but in the proper amount. If you need fluffy malpua then you will beat the batter very well for about 2 mins. Keep it aside for 1 hr.

To make sugar syrup, mix sugar and water in a pot. Boil the syrup until it turns sticky.

Heat 3 cups of water in a pot and place the syrup pot in it to keep it warm and prevent crystallization.

Add 3 tbsp ghee in a deep pan and heat it. When ghee turns hot, pour half ladle of batter about 3 tbsp.

Don't spread the batter as it spreads on its own. When the edges turns like light golden brown flip and fry another side.

When it turns golden brown transfer to a plate. Follow the same steps to make more malpua. Then add to the sugar syrup immediately.

Remove them in a wide plate. Garnish with some chopped pistachios and almonds and dry rose petals (optional) Now it's done. Serve delicious malpua.
