Suran nu shak/ Vrat ki subji

Suran is also known as elephant foot yam or jimikand. It is a type of root vegetable which is full of health benefits. Suran is specially used during fasting to prepare different things. Suran sabji is prepared using very few ingredients yet it is absolutely delicious served with moriyo or sama chawal ki khichdi and curd.

Suran sabji is prepared using very few ingredients yet it is absolutely delicious served with moriyo or sama chawal ki khichdi and curd.

First of all wash suran and peel it. Wash it again and cut it into medium size pieces. Apply little oil on your hands while cutting it to avoid any itchiness. Add suran along with 1/4 cup of water to the pressure cooker and cook it until two whistles. Now take it out and let it cool completely. Make sure that you do not over boil it. Over boiled or hot suran will get all mushy and the subji will be like a lump so let it cool down completely.

Heat ghee in a pan and add cumin seeds to it. When it changes its colour, add green chillies and curry leaves to it. Now add crushed groundnuts to it and cook it on medium heat for a minute.

Now add suran, black pepper powder, salt, sugar and lemon juice to it and give it a good mix. Cook it on medium heat for 5 minutes. Now add coriander leaves to it and turn off the heat.

Serve suran nu shak with curd and moriyo or sama chawal ki khichdi. This combo tastes really delicious.
