Heat the coconut oil in a pan over low heat. Pour in the batter to form pancakes. Wait until bubbles form on the surface, then flip to cook the other side.

Once both sides are cooked, transfer the pancakes to a plate. You can add honey or yogurt for extra flavor, and top with fresh fruit or sliced almonds if you like.
