A mix of a few recipes. Very good texture. Versatile for use in many other recipes. Consider chopping up and freezing for later use as this recipe makes quite a lot.

Mix vital wheat gluten, nutritional yeast, and water.

Knead slightly. Add cornstarch or chickpea flour. Knead until well absorbed. Let sit at room temperature for 1 hour covered loosely.

Flatten dough out. Heat in olive oil in a large saute pan until browned. Flip and brown the other side.

Remove from pan. Let rest on a cutting board until cool enough to handle. Cut into slices or chunks.

Make flavoring broth in a sauce pan. Put Seitan in sauce pan and simmer for 30-40 minutes.

Remove from pan and reduce 1 cup of broth to a sauce. Add oyster sauce and gojuchang sauce. Place part of Seitan in saute pan again. Reserve the rest for another use.

Add barbecue sauce to Seitan and heat through. Serve.

Note: texture and flavor improve if reheated and served the next day. Consider making ahead.
