Ingredients

  1. 1 1/4 cVital Wheat Gluten
  2. 2 tbspnutritional yeast
  3. 1 cwater
  4. 1/4 ccornstarch or chickpea flour
  5. Flavoring Broth
  6. 6 cwater
  7. 1/3 ctamari
  8. 1/2 tspgarlic powder
  9. 1 tspsalt
  10. 1/2 tspfreshly ground pepper
  11. 1-4 inchpiece Kombu
  12. 1 tspmushroom unami powder
  13. 2 tbspChinese white wine
  14. Barbecue Sauce
  15. 3 tbspc oyster sauce
  16. 3 tbspc gojuchang sauce
  17. 3 tbsphoisin sauce
  18. 1 cflavoring broth

    Mix vital wheat gluten, nutritional yeast, and water.

  2. 2

    Knead slightly. Add cornstarch or chickpea flour. Knead until well absorbed. Let sit at room temperature for 1 hour covered loosely.

  3. 3

    Flatten dough out. Heat in olive oil in a large saute pan until browned. Flip and brown the other side.

  4. 4

    Remove from pan. Let rest on a cutting board until cool enough to handle. Cut into slices or chunks.

  5. 5

    Make flavoring broth in a sauce pan. Put Seitan in sauce pan and simmer for 30-40 minutes.

  6. 6

    Remove from pan and reduce 1 cup of broth to a sauce. Add oyster sauce and gojuchang sauce. Place part of Seitan in saute pan again. Reserve the rest for another use.

  7. 7

    Add barbecue sauce to Seitan and heat through. Serve.

  8. 8

    Note: texture and flavor improve if reheated and served the next day. Consider making ahead.
