In your pan add the sugar and melt and then add your curry paste and cook for a minute or so. If you are using chicken add your chicken at this point and cook for a further few minutes.

Then in with your coconut milk, lime juice, and soy sauce. simmer until the sauce has started to thicken and the chicken has cooked.
if using prawns add your prawn in towards the end with your broccoli and cook for a few mins as you do not want to the prawns over cooked. then serve with Jasmin rice.
