Beat the egg in a bowl, add the feta, and mash everything with a fork. Add chopped mint and pepper. (Add salt if needed, but feta is already salty)

Cut your phyllo sheets lengthwise into 4 strips. Brush them with olive oil. Place a teaspoon of filling on each strip and fold into a triangle shape.

Bake for 20 minutes at 350°F.

Drizzle a little honey on top when serving.
