A treat all the way from my little paradise island Mauritius. Perfect with dhall puri, rice and even on a baguette 😋.
Steps

Put your cabbage, carrot and green beans in a bowl with a pinch of salt into a bowl and put boiling water in and Blanche for 2 minutes. Remove and strain.

In your wok or pot, heat your oil on medium and sauté your onion, chilies, Tumeric and mustard seeds.

Add salt to taste then add your garlic and ginger paste till everything is translucent and bonded. Turn your plate off and allow to cool for 10 minutes.

Your blanched vegetables should be cool by now. Squeeze to take out any excess water then place in the wok and mix all together. Add your vinegar and mix again.

Place in a bowl or airtight container if you can have the next day (better the next day but I can’t wait 😅). If you’re gonna have it on the same day then wait for at least an hour for the flavours to develop. All done 😋.
