Ingredients

1 serving
  1. 1/4 ctricolor quinoa
  2. 1/4 croasted sweet potato
  3. 1/4 cdried cranberries
  4. 1/4 cpecan halves
  5. 2 ozkale
  6. 2 tbspred wine vinaigrette
  7. 2 ozmesquite turkey

Cooking Instructions

  1. 1

    Cook quinoa according to package directions.

    Cube sweet potato. Coat with oil and season. Bake at 350F for 20 minutes.

    To a salad bowl, add chopped kale, turkey, and 1/4 cup of each topping (pecans, quinoa, sweet potato, and dried cranberries) then add red wine vinaigrette.
