Homemade Creamy Carrot Soup

Ingredients

  1. 1 bagWhole Carrots (1lb) or 6 carrots
  2. 32 ozLow Sodium Chicken or Veg Broth (+ 1C if desired to thin)
  3. 1 tbsp Garlic Powder, as desired
  4. 4 tbspReal Butter
  5. 1Onion, Diced
  6. 1/4 pintHeavy Whipping Cream
  7. as per tasteSalt and Black Pepper to taste
  8. someThin slices of Avocado for Garnish
  9. For a bit of a more seasoned twist:
  10. 1/2 tsp eacheach: Garam Masala, Ground Ginger, Ground Cumin, Turmeric
  11. 1 tspGround Red Cayenne Pepper

Cooking Instructions

  1. 1

    Shave and cut carrots, then boil in the chicken broth (or any broth) til tender

  2. 2

    Heat Butter over medium high temperature in skillet, then Sautee onions til translucent or slightly brown, as desired

  3. 3

    Add Skillet of Sautéed Onions in butter to the pot of carrots in broth. Add seasonings then Simmer 20minutes.

    Remove from heat and blend (I used emulsion blender) add Cream and blend, adjust thickness with more broth as desired.

    Dip into a bowl, garnish with avocado and more seasonings as to personal preference.
