Vegan Caramel Pearl Milk Green Tea

Mix the sweetener, xanthan gum, and salt in a small bowl. I used Swerve brand Brown Sugar, a natural sweetener made from erythritol and selected plants and fruits, free of artificial colors and low glycemic. You can use your preferred sweetener brand, but choose a brown sugar type to achieve the caramel color. Xanthan gum, made from the bacterium Xanthomonas campestris, is an organic thickener and binder. A little goes a long way to prevent separation of homemade sauces over time.

Next, add water and a tablespoon of unsweetened almond butter to a high-speed blender. Blend for a few seconds to combine. Pour into a small pot and heat over medium until bubbles form at the edges. Reduce to medium-low and cook for about 15-18 minutes until thick enough to leave a trail when you run your finger through the spoon, as shown in picture three! No need to stir constantly while cooking the caramel. Don't overcook. If the caramel sauce is too thick, it won't flow like lava; if too thin, it won't stick to the container and won't show the lava effect.

The cooled caramel sauce will be thicker but still pourable. If it can't flow, it's overcooked and lost moisture! Bottle the cooled caramel. Fresh wild blueberries are available only in summer, smaller than regular blueberries but with a more intense blueberry sweetness. If fresh wild blueberries aren't available, you can use frozen ones. They're smaller than bubble tea pearls and can pass through a bubble tea straw! You can also use regular blueberries, but you might need a small spoon!

Add all pearl milk green tea ingredients, except blueberries, to a high-speed blender. Blend for a few seconds until combined and milkshake-like.

I used a 15 oz (450 ml) container. Squeeze the caramel sauce along the container's edge, letting it slowly flow down for a lava caramel effect. Then add wild blueberries and pour in the caffeine-free plant-based milk green tea made with avocado. This completes the high-protein, low-sugar, caffeine-free pearl milk green tea that both adults and kids can enjoy easily.

Since the milk green tea is thick enough, you can also use the caramel sauce for decoration on top!
