What can you do with an eggplant? So many things! But if you're craving lasagna and want to eat some veggies, this recipe is a great option. It's very easy and especially quick, perfect for those days when you don't have time to cook but want to enjoy something delicious.

Slice the eggplant into rounds about 1/4 inch thick.

Once sliced, microwave them for about 6 minutes until they soften.

After microwaving, take the dish where you'll cook this lasagna and prepare it:
A layer of eggplant, then a layer of tomato sauce with oregano, one and a half slices of cheese, and a slice of ham.
Repeat the process with the remaining ingredients.
On the last layer, add shredded cheese. - 4
Place the dish in the air fryer and set it for 15 minutes at 392°F (200°C).
When it's done, be very careful because it's extremely hot!
Let it cool a bit and then serve.
